Healthy Reese's Cups

You read that right. Sweets are my weakness, so I'm always trying to come up with new ways to make desserts a little healthier. One night, Grant and I were in a baking mood and craving something sweet, so we decided to come up with a healthier version of Reese's PB cups and they were a hit!


They aren't the healthiest Reese's cups ever, but they're healthier, all natural, unprocessed, and homemade (and there's tips at the bottom for how to cut down on the sugar content too).

Ingredients:

  • 1 C dark chocolate

  • 1/4 C + 2 TBSP coconut oil (keep these separate)

  • 1/2 C peanut butter or other nut butter

  • 3 TBSP honey

  • 1 tsp. vanilla


Directions:

  1. Melt the chocolate and 1/4 C coconut oil in the microwave stirring every 20-30 seconds until fully melted

  2. Once melted, stir the vanilla into melted chocolate

  3. Line a muffin pan (small or large) with cupcake liners OR if you don't have cupcake liners, lightly coat the pan with cooking spray

  4. Using HALF of the melted chocolate mixture, spread the chocolate evenly into the cupcake liners or pan (about 1/3 of the way full)

  5. Place the pan in the freezer

  6. Melt the PB, honey, & 2 TBSP coconut oil in the microwave stirring every 20-30 seconds

  7. Once chocolate in the freezer is set, remove from the freezer and evenly disperse the peanut butter on top

  8. Place the pan back in the freezer for the PB to set

  9. Once firm, fill the liners up with the remaining chocolate

  10. Place the pan in the freezer until the chocolate on top is fully set

Tips:

  • To cut down on the sugar content: sub the dark chocolate chips with sugar-free chocolate chips - you can do 1/2 C sugar-free and 1/2 C dark chocolate or swap out the entire cup with sugar-free

  • To remove them from the pan if you did not use cupcake liners: let them sit at room temperature for a few minutes, tap the pan on the counter, and/or gently twist the pan (if you have the pans that allow you to do so) so the cups pop out

  • Store them in an airtight container in the fridge or freezer (we stored them in the fridge)
