No-Bake Chocolate PB Protein Cookies

Believe it or not- these quick, easy, HEALTHY cookies aren't too good to be true! They're natural, dairy-free, and can be tweaked to be made vegan as well. I hope y'all enjoy this recipe!

 

COOKIES

 

INGREDIENTS:

 

- 4 C steel cut oats

- 1 C maple syrup (can use honey, we used maple syrup)

- 3/4 C creamy PB (or natural, not hydrogenated, freshly ground PB for vegan cookies)

- 1/2 C coconut oil

- 1/2 C unflavored, unsweetened protein powder (plant-based powder for vegan cookies)

- 1/3 C unsweetened almond milk (could use coconut or cashew milk)

- 1 TBSP vanilla extract

- Sea salt to taste

 

DIRECTIONS:

 

1.) On low/medium heat and in a large saucepan, continuously whisk protein powder + maple syrup until combined

2.) Add the coconut oil + almond milk; whisk until combined

3.) Add the peanut butter, salt, + vanilla extract; whisk until the peanut butter is fully melted

4.) Stir continuously while adding the oats

- We (Grant and I) added the oats 1 C at a time. After the 2nd C of oats, we turned the stove off but left the pan on the warm stove until we were finished mixing. We did this so the oats could slightly cook in and absorb the mixture.

5.) Remove saucepan from heat

6.) Line a baking sheet with wax paper

7.) Line the sheet with cookies using a spoon or cookie-scooper to help form the cookies

8.) Put in the fridge to let cookies cool and set (about 1 hour)

 

CHOCOLATE TOPPING

 

INGREDIENTS:

 

- 1 C dark chocolate chips (or semi-sweet dairy-free chocolate chips for vegan cookies)

- 1 tsp coconut oil

- Sea salt to taste

 

DIRECTIONS:

 

- This is optional; Grant said these cookies were so good they didn't even need the chocolate drizzle (which is saying A LOT)

1.) On low heat and in a small pot, melt the coconut oil

2.) Add the chocolate chips + salt

3.) Stir continuously until fully melted; be sure not to burn the chocolate

4.) Remove pot from heat

5.) Using a spoon, drizzle the chocolate over the tops of the cookies

- If cookies are fully hardened, can also dip the cookies in the chocolate

6.) Put in the fridge until the chocolate sets (about 10-15 minutes)

 

TIPS

 

• Store them in a cool environment or the fridge

• Blend the oats in a food processor if you don’t like the texture of oats/oatmeal

• I drizzled the chocolate pretty generously and still had chocolate leftover (Grant did eat a couple cookies before I added the chocolate so that could be why) BUT you may only need 1/2 - 3/4 C of chocolate chips

• 1/2 C coconut oil for the cookies is pretty generous, so you would be fine decreasing it to 1/3 C coconut oil OR 3/4 C maple syrup

• For the protein powder, we only had flavored protein powder on hand, so we the used Vital Proteins Collagen Peptides that I take (18 g of protein per 20 g servings) but I wouldn't recommend using this simply because it is a rather pricey supplement
